Chili Chicken Sandwiches

O.k....ladies just a quick post and then I won't be able to get back on the computer.
I have housework and homeschooling stuff I need to take care of.

I am trying a new recipe for dinner tonight....Chili Chicken Sandwiches. I got the recipe out of my Simple and Delicious magazine. I make our own hamburger buns and am including both recipes.

CHILI CHICKEN SANDWICHES



1 pkg (8oz) cream cheese, softened
2 cups cubed cooked chicken
1 1/2 cups shredded cheddar cheese
1 can (4oz) green chilies
3 Tbsp. chopped green onions
1 tsp. ground cumin
1/4 tsp. crushed red pepper flakes
1/4 tsp. chili powder
4 rolls (hamburger buns)
2 Tbsp. minced fresh cilantro

In a small bowl, beat the cream cheese until fluffy. Stir in the chicken, cheddar cheese, chilies, onions and seasonings. Cut tope fourths off of rolls; carefully hollow out bottoms, leaving 1/4 in. shells (discard removed bread or save or another use.) Fill bottom portions with chicken mixture; replace the tops.

Place on a baking sheet. Bake at 375 degrees for 5-7 minuts or until golden brown. Sprinkle with cilantro.

HAMBURGER BUNS

1 1/2 cups warm water
1/4 cup oil
2 Tbsp. honey or brown sugar
2 tsp. salt
4 cups bread flour
2 tsp. active dry yeast.

Layer the ingredients in to the bread machine in the order given. Set the bread machine on the Dough Cycle. Press Start. When the dough is done mixing and rising, divide it into 16 equal pieces. Roll the pieces of dough in to balls and flatten slightly. Arrange them on an oiled cookie sheet sprayed. Let them rise for about 30 minutes or until doubled in size. Bake at 400 degress for about 20 minutes. Serve hot, or allow to cool and use as hamburger buns. I usually brush or rub butter on top of the buns when they come out to keep them soft.
