I will be running all over the place today...gotta go to the bank, pay the utility bill, then have to drive an hour each way to take my son to a weekend birthday party.
Guess what? We found the cords to our digital camera! Yea! Now I will be able to post some pictures---finally.
We just love Broccoli Cheese Soup and thought I would share this easy recipe with you.
(I usually double this recipe)
Broccoli Cheese Soup
2 cups water
1 tep. chicken bouillion or 1/2 veg. bouillion cube
1 pkg (16) oz frozen chopped broccoli, thawed
1 med onion, chopped
1/4 cup butter, cubed
3 Tbsp all purpose flour
1 cup milk
1 pound process cheese (Velveta), cubed
In a large saucepan, bring water and bouillion to a boil. Add broccoli. Reduce heat; cover and simmer for 3-4 minutes or until crisp-tender. Drain, reserving 3/4 cup liquid. In aohter large saucepan, saute onion in butter until tender. Whisk in flour until blended. Add the milk and cheese. Cook over medium-low heat until thickened and cheese is melted, stirring frequently. Stir in broccoli and reserved cooking liquid.
